**THE MANY FACES OF THE MEXICAN TORTILLA**
Mexican cooking starts now as in the Aztec days with
tortillas, the "bread of Mexico".
Mexicans use them as plates, forks and spoons. They dip their tortillas into
stews and use
torn off pieces to scoop up sauces. They are the staple in a whole repertoire of
dishes…..
* Take a tortilla and fold it around any food and you have a taco, the Mexican
style
"sandwich", hard fried or soft folded and rolled around food.
* Take a larger hard rolled taco and you have a flautas (flutes).
* Take a flat tortilla and fry it til crisp and you have a tostada.
* Take a flat tortilla and cook it slightly in a red chile pepper sauce and you
have an enchilada.
* Take a stale tortilla, cut it into strips and fry slightly and cover it with
salsa and you have chilaquiles.
* Take a really stale tortilla, fry it til crispy and you have tortilla chips.

** RECIPE **
The Easiest Mexican Rice & Chicken Dinner
Ingredients
1 tbsp. oil
4 small boneless chicken breasts, approx. 1 lb
2 cups water
1 1/2 cup Tejano Salsa, mild or medium

2 cups Minute Rice, uncooked
8oz. can whole kernel corn, drained
1 cup shredded Cheddar cheese
Directions:
Heat oil in a large skillet, add chicken, cover and cook 4 minutes each side.
Stir in rice and corn. Top with chicken. Sprinkle cheese, cover.
Cook on low for 5 minutes.

DID YOU KNOW……..
Make Mexican rice loose and dry: use a
non stick skillet or wok and sautee the dry rice grains in a bit of olive oil or
vegetable oil until translucent. Then continue with your liquids ingredients and
cook until the grains are tender.
