**RECIPE**
Captain Don’s Island BBQ Sauce (for chicken & pork)
INGREDIENTS:
1 stick margarine
1-14oz. can tomato sauce
Ľ cup Carlo Rossi Burgundy wine
1 tbsp. Colavita Balsamic vinegar
1 tsp. brown sugar
1 tsp. granulated sugar
˝ tsp. ground cinnamon
1/16 tsp. ground red cayenne pepper

1/8 tsp. ground black pepper
PREPARATION:
In a 1quart saucepan, melt margarine over low heat. When melted, add tomato
sauce, wine & vinegar. When mixture becomes very warm (do not boil) add
remaining ingredients and stir. Keep sauce warm, stirring occasionally for at
least ˝ hour to allow sugars to dissolve and flavors to meld.
Brush onto all sides of meat about 15 minutes prior to removing meat from grill.
Cool down grill so that sauce does not burn on meat. Brush again when placing
meat on serving platter. Serve remaining sauce on the side.

use your potato peeler and remove spines & eyes. Trim off with a knife
bruised & dry edges and rinse well. Wash off the sticky liquid the plant
exudes, cut up about the size of a green bean.

years in the freezer if kept in an air tight container. Frozen pecans do not
need to be thawed to use.
