RECIPES

GUACAMOLE WITH CHEESE DIP

3 avocados
8 oz. cheese dip (jar)
½ cup sour cream
½ cup cilantro, finely chopped
1 tsp. rosemary
1 tbs. garlic powder
½ cup pimentos, diced
1/3 cup water

Mash avocados; add cheese dip, sour cream and garlic. Combine all other ingredients, thoroughly mix.
Add 1/3-cup water to hold the green color. Salt & pepper to taste. Cover & refrigerate.

FAJITA MARINADE **our favorite from the Houston Chronicle files, May 1986**

4 cups "light" soy sauce
1 cup brown sugar, packed
1 tsp. each: garlic & onion powder
8 tbs. (1/2 cup) fresh lemon juice
4 tsp. ground ginger
1 skirt steak (about ¾" thick) approx. 1 ½ lb.

Combine all ingredients (not beef) & shake well ‘til sugar is dissolved. Let stand overnight in a sealed jar.
Set aside 1 cup and pour remainder over beef; cover for 2 hours or overnight, refrigerated.
Remove beef from marinade & grill over very hot coals for a short time (10 minutes).
Chop meat with a clever into bite-size pieces. Fold into warm tortillas & serve with pico de gallo, sour cream, shredded cheese and sour cream.

NOTE: The secret to tender fajitas is a hot fire and a short cooking time. Meat should be no more than ¾ " thick. SUBSTITUTIONS: flank steak, boneless sirloin, tenderized round steak or boneless chicken breasts or tenders.

**SERAPE **Traditional serapes made of wool and woven in two long rectangles were sewn together leaving a hole in the middle to allow a slot for the head. Only men wore serapes and it has been estimated that women might have spent upward to one year hand-weaving this garment. The origin of the serape is unknown, but it is likely that it was born of both Native American and Spanish roots. During the early 1800’s, the serape became symbolic of democratic ideas and became a national symbol during the Mexican Independence movement. Click here to view:

**MOLCAJETE** A molcajete (motar & pestle) has long been the basis of any traditional Mexican meal.

Supported by three short legs, it is a thick bowl made of basalt (a porous volcanic rock), seven to eight inches in diameter and four to five inches high. Its corresponding Mexican pestle is called tejolote, pear shaped and usually three to four inches long and made of the same very fine-pored, heavy, black basaltic rock. The molcajete is indispensable kitchen component of all serious Mexican cooks. It is used for pounding & pulverizing soft produce like tomatoes, chili peppers, onions, condiments and herbs to make seasonings and Mexican salsas. Click here to view:
